Prawn (shrimp) Cocktail

Ingredients

- 16 medium prawns, shelled, deveined and cooked (shrimp)
- 1/2 cup low-fat mayonnaise
- 1/4 cup tomato sauce (ketchup)
- 1/4 teaspoon ground black pepper
- 3 drops tabasco sauce
- 4 small lettuce leaves
- 4 cherry tomatoes, cut into quarters
- 4 teaspoons corn kernels
Recipe
- 1 in a small bowl combine mayonnaise, tomato sauce and pepper and mix well.
- 2 add a few drops of tabasco sauce, stir and taste, adding more tabasco to taste.
- 3 add prawns to the bowl and blend through lightly.
- 4 place lettuce leaves in bottom of 4 martini glasses and top with prawn mixture (4 prawns per serve).
- 5 garnish with cherry tomatoes and corn kernels.
- 6 serve chilled.
