Preparation Time: 20 mins
Ingredients
- Servings: 4
- 2 cups water
- 1 cup sugar
- 1 1/2 cups berries
- 1 cup cold milk
- ice cube
- 3 cups seltzer water
Recipe
- 1 make a simple syrup by combining the sugar and water in a small pot over medium high heat. whisk occasionally to help dissolve the sugar. bring to a boil and take it off the heat to cool, just for 10 or 15 minutes. you want the simple syrup to be just a bit warm when the fruit is added to it. you will only need about 1 3/4c syrup for the recipe, keep the rest stored in your fridge for another use.
- 2 add the berries to the pot with the warm syrup and stir. with a slotted spoon transfer the fruit to a blender or food processor. add 3 tablespoon of the syrup and blend until smooth.
- 3 pour the puree into a medium strainer or sieve set over a bowl and press the juice through with the back of a spoon. you will have about 3/4 c of puree. refrigerate until you are ready to make the drinks.
- 4 for each drink combine 3 tablespoons of the puree with 1/4 cup of milk in a tall glass, either shaker in a cocktail shaker or stirring with a spoon. add the ice cubes, pour in 3/4 cup seltzer, and shake or stir until frothy. serve cold.
