Fruit Cocktail Bundt Cake

Ingredients

- 1 cup milk
- 2 eggs
- 2 tablespoons olive oil
- 1 cup brown sugar
- 3/4 applesauce
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 3 cups pancake mix
- 1 (15 ounce) can fruit cocktail, drained
- shortening
- powdered sugar
Recipe
- 1 preheat oven to 350.
- 2 mix milk, eggs, oil, sugar, applesauce, cinnamon and vanilla until smooth. mix in pancake mix, one cup at a time. cut fruit into smaller pieces.
- 3 grease a bundt pan with shortening. pour half the batter into pan.
- 4 layer half the fruit over batter. pour remaining batter over top and sprinkle with remaining fruit.
- 5 bake 45-50 minutes. invert onto a plate.
- 6 once cooled, sprinkle powdered sugar over top.
