Fruit Cocktail Pie

Ingredients
- Servings: 8
- 2 (16 ounce) cans fruit cocktail
- 1/4 cup sugar (or to taste)
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1/16 cup butter (1/8 stick)
- 1 egg, lightly beaten
- 1 double crust pie crust (i use the pillsbury pre-made crusts)
Recipe
- 1 drain juice from fruit cocktail, reserving juice.
- 2 mix sugar, cornstarch, and cinnamon and add to juice.
- 3 add butter and cook over low heat until mixture thickens.
- 4 line pie plate with bottom crust.
- 5 add fruit and thickened juice.
- 6 top with second crust.
- 7 brush with egg wash.
- 8 bake at 375 degrees for 50 minutes or until bubbly and brown.
