Fish Eye Salad (tapioca Fruit Salad)

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 cup pearl tapioca
  • 2 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 1 (20 ounce) can fruit cocktail, , drained
  • 3/4 cup whipped cream (my mother in law uses nutriwhip non dairy whipped topping)

Recipe

  • 1 soak tapioca and water over night,drain add milk and salt and cook until transparent.
  • 2 add sugar, and cool.
  • 3 add fruit cocktail.
  • 4 fold in whipped cream.
  • 5 chill.
