Knickerbocker Glories

Ingredients

  • Servings: 4
  • 1 package strawberry jelly
  • 1 can fruit cocktail
  • 1 can pitted cherries
  • 2 teaspoons arrowroot
  • 1 tablespoon caster sugar
  • 300 ml double cream, whipped
  • 600 ml vanilla ice cream
  • 1 teaspoon grated fresh lemon rind
  • 3 tablespoons toasted flaked almonds
  • 4 maraschino cherries

Recipe

  • 1 combine jelly with 300 ml boiling water.
  • 2 stir until dissolved.
  • 3 drain juice from the fruit cocktail.
  • 4 add it to the jelly.
  • 5 stir in fruit.
  • 6 pour into a shallow bowl.
  • 7 chill until softly set.
  • 8 drain juice from cherries.
  • 9 mix a little of the juice to a smooth paste with the arrowroot and sugar.
  • 10 stir in the rest.
  • 11 heat.
  • 12 stir until the sauce boils and thickens.
  • 13 stir in the cherries and rind.
  • 14 cool.
  • 15 stir jelly to break it up.
  • 16 spoon into the base of 4 glasses.
  • 17 top with a scoop or two of ice-cream.
  • 18 divide cherries and sauce between glasses and top with a scoop of ice-cream.
  • 19 pipe a little cream on top.
  • 20 scatter over the almonds.
  • 21 top with the cherries and serve with wafers!
