Grilled Shrimp Kebabs With Quick Cocktail Sauce

Ingredients

- 1 cup ketchup
- 1 tablespoon prepared horseradish
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped parsley
- 2 scallions, minced
- 1 1/2 lbs large shrimp, shelled and deveined
- 2 tablespoons olive oil
Recipe
- 1 in a small bowl, combine ketchup, horseradish, lemon juice, parsley and scallions.
- 2 cover and refrigerate until serving time. if using bamboo skewers, soak in water at least 3o minutes.
- 3 prepare hot grill.
- 4 thread shrimp on skewers and brush with olive oil.
- 5 grill, turning once until shrimp are pink and begin to curl; 4-6 minutes.
- 6 serve with cocktail sauce for dipping.
