Pineapple Margarita

Ingredients

- 1/2 small ripe pineapple
- 1/2 cup pureed pineapple juice
- 1/4 cup lime juice
- 1/4 cup lemon juice
- 1/4 cup superfine sugar
- 1 pinch salt
- 1 cup agave tequila
- 1 cup triple sec
Recipe
- 1 peel and core pineapple, cut into 2 inch chunks.
- 2 puree in food processor with steel blade until smooth and foamy (1 minute).
- 3 strain into shaker or pitcher, saving ½ c juice.
- 4 add lemon, lime, and pineapple juices.
- 5 add tequila, triple sec, and 1 cup crushed ice.
- 6 stir or shake thoroughly, 20 to 60 seconds.
- 7 divide 1 cup ice into sugared glasses, pour mix over.
- 8 serve immediately.
