Pineapple Margarita

Ingredients

  • Servings: 4
  • 1/2 small ripe pineapple
  • 1/2 cup pureed pineapple juice
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup superfine sugar
  • 1 pinch salt
  • 1 cup agave tequila
  • 1 cup triple sec

Recipe

  • 1 peel and core pineapple, cut into 2 inch chunks.
  • 2 puree in food processor with steel blade until smooth and foamy (1 minute).
  • 3 strain into shaker or pitcher, saving ½ c juice.
  • 4 add lemon, lime, and pineapple juices.
  • 5 add tequila, triple sec, and 1 cup crushed ice.
  • 6 stir or shake thoroughly, 20 to 60 seconds.
  • 7 divide 1 cup ice into sugared glasses, pour mix over.
  • 8 serve immediately.
