Momma's Fruit Cocktail Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 (16 ounce) can fruit cocktail in heavy syrup
  • 1 egg
  • 1 cup sugar,
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 1/2 cup brown sugar

Recipe

  • 1 drain the fruit, beating the juice with the egg till creamy.
  • 2 add the flour, sugar, baking soda and salt.
  • 3 fold in the fruit.
  • 4 pour into a greased 8 x 8 inch pan. top with nuts and brown sugar.
  • 5 bake for 35 minute at 350.
  • 6 serve with dollops of fresh whipped cream.
