Sunset Ember

Ingredients

  • Servings: 2
  • 4 ounces rum (aged rum such as cruzan single barrel estate)
  • 1 ounce fresh lemon juice
  • 1/2 ounce simple syrup
  • 1/2 ounce grenadine
  • 2 egg whites
  • maraschino cherry, for garnish
  • 1 1/2 cups pomegrante juice
  • 3/4 cup pure unbleached cane sugar

Recipe

  • 1 for grenadine: bring juice and sugar to a boil in a medium saucepan. reduce heat and simmer to thicken slightly. let cool. grendine will keep, covered and refrigerated, for up to 1 month.
  • 2 for cocktail: in a cocktail shaker, combine rum, juice, simple syrup,grenadine, and egg whites; shake well. strain into 2 chilled cocktail glasses. garnish each with a cherry.
