Snow Pea Salad

Ingredients

- 1 lb snow peas
- 1 cup cocktail tomato, halved
- 1 (5 ounce) can water chestnuts, sliced and drained
- 1/4 cup chopped green onion
- 1/4 cup canola oil
- 1 tablespoon lemon juice
- 1 tablespoon vinegar
- 1 small garlic clove, crushed
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
Recipe
- 1 cook the snow peas in a small amount of boiling water for 1 to 2 minutes. they should be tender but still crisp. chill.
- 2 combine with water chestnuts, tomatoes, and green onions.
- 3 combine the remaining ingredients in a small bowl and mix well. add to the vegetables and toss gently.
- 4 chill overnight for best results.
