Cucumber-olive Appetizers

Ingredients

  • Servings: 10
  • 1 large cucumber (unpeeled, skin washed)
  • 0.5 (8 ounce) cream cheese, softened
  • 1/4 cup bleu cheese salad dressing (or to taste)
  • 1 small garlic clove, finely minced (may omit if desired)
  • 1 loaf sliced rye cocktail bread (1-pound loaf, can use dark pumpernickle)
  • sliced pimento-stuffed green olives (use as many slices as needed)

Recipe

  • 1 slice the unpeeled cucumber into 1/4-inch slices/rounds.
  • 2 in a small bowl combine the cream cheese with blue cheese salad dressing and garlic powder.
  • 3 spread onto each slice of cocktail bread.
  • 4 top with a slice of cucumber and an olive slice.
  • 5 if desired but it is not necessary you may place one colored toothpick through the olive and down into the bread.
  • 6 place onto serving platter/s.
