Chilly Leprechaun Parfaits

Ingredients
- Servings: 4
- 6 ounces creme de menthe (4 shots about 1 1/2 oz. each)
- 1 pint mint chocolate chip ice cream
- 4 chocolate-covered mint candies (like andes candies or peppermint patties)
- 4 sprigs fresh mint
- 4 tablespoons whipped cream (optional)
Recipe
- 1 using 4 parfait or cocktail glasses, pour half a shot of creme de menthe in each glass.
- 2 top with scoops of ice cream, then drizzle another half a shot per glass, over the ice cream.
- 3 garnish each with whipped cream if using, the chocolate mint candy and fresh mint sprigs. enjoy!
- 4 *we usually use more creme de menthe, like 2 shots per glass instead of one, but use your own judgment*.
