Shrimp Starter

Ingredients

  • 500 g shrimp, cooked
  • 1/2 cup mayonnaise
  • 1/2-1 teaspoon dried tarragon
  • 1 large gherkin, diced
  • 1 tablespoon capers, drained and rinsed
  • 2 teaspoons mustard, made
  • 1 spring onion, diced
  • to taste fresh black pepper, ground

Recipe

  • 1 place shrimp in a bowl.
  • 2 combine all remaining ingredients and pour over the shrimps, turning to coat well.
  • 3 cover and refrigerate for 2 hours for flavours to develop.
  • 4 serve in cocktail glasses and garnish with fresh chopped herbs.
