Lemon Berry Oatmeal

Ingredients

  • 1/2 cup quick-cooking rolled oats
  • 1/4 cup pure cranberry juice (not hfcs-laden "cranberry cocktail)
  • 1/2 cup 1% low-fat milk
  • 2 tablespoons lemon curd
  • 1 handful dried cranberries
  • 1 handful of chopped pecans

Recipe

  • 1 whisk the oats, cranberry juice, milk, and lemon curd together in a microwave-safe bowl. nuke for 1-2 minutes or until fully cooked.
  • 2 add the cranberries and pecans to garnish.
