Nutty Fruit Cocktail Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 cup pecans
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 15 ounces fruit cocktail, with 3 tbsp liquid reserved
  • 1/4-1/2 cup brown sugar

Recipe

  • 1 drain off liquid of fruit cocktail reserving 3 tbsp of the liquid.
  • 2 combine flour, sugar, pecans, baking soda, salt and fruit cocktail with reserved liquid.
  • 3 pour into an 8x8 greased and floured pan.
  • 4 sprinkle top with brown sugar.
  • 5 bake at 350 degrees for 1 hour. check for doneness at 45 minutes.
  • 6 can subsitute different nuts for different tastes. i have found that 1/4 c is enough brown sugar. we love this with french vanilla ice cream!
