Shrimp Ono Nui

Ingredients

  • Servings: 8
  • 24 jumbo shrimp, raw, peeled, and deveined
  • 1/2 cup flour
  • salt
  • 2 eggs, beaten
  • 1 1/2 cups shredded coconut
  • oil, for deep frying
  • 1 cup seafood cocktail sauce, bottled
  • 1/4 cup crushed pineapple

Recipe

  • 1 roll the shrimp in flour seasoned with salt, then dip in the beaten egg.
  • 2 roll the shrimp in the coconut, covering thoroughly.
  • 3 deep-fry the shrimp in oil heated to about 350 degrees until browned and cooked through, about 3 to 4 minutes.
  • 4 drain on paper towels.
  • 5 mix the cocktail sauce with the crushed pineapple.
  • 6 serve the shrimp with the sauce on the side.
