Ingredients

- 24 jumbo shrimp, raw, peeled, and deveined
- 1/2 cup flour
- salt
- 2 eggs, beaten
- 1 1/2 cups shredded coconut
- oil, for deep frying
- 1 cup seafood cocktail sauce, bottled
- 1/4 cup crushed pineapple
Recipe
- 1 roll the shrimp in flour seasoned with salt, then dip in the beaten egg.
- 2 roll the shrimp in the coconut, covering thoroughly.
- 3 deep-fry the shrimp in oil heated to about 350 degrees until browned and cooked through, about 3 to 4 minutes.
- 4 drain on paper towels.
- 5 mix the cocktail sauce with the crushed pineapple.
- 6 serve the shrimp with the sauce on the side.
