Spring Morning Berries

Ingredients
- Servings: 6
- 2 cups fresh strawberries, quartered
- 2 tablespoons honey
- 1 cup fresh squeezed orange juice
- 1/2-1 can pineapple, drained
- 1/2 tablespoon granulated sugar
- 1/2 cup fresh raspberry (may use frozen, but drain liquid)
- 1 cup ice cube
- champagne
- mint leaf (optional)
Recipe
- 1 puree strawberries, pineapple, and raspberries.
- 2 add honey, sugar, and orange juice to pureed mixture, and blend.
- 3 add ice cubes, and process until smooth consistency.
- 4 pour mixture into a rectangular baking pan (9 by 13") and freeze until firm.
- 5 take ice cream scooper and'shave' the fruited ice.
- 6 place shavings in a champagne glass, and fill approximately 1/2 full (to taste).
- 7 pour champagne over frozen mixture.
- 8 top with mint leaf, if desired.
- 9 *verygood for breakfast or brunch!
